So, gather your ingredients and let's embark on a culinary journey that will elevate your monsoon dining experience.

Ingredients:
To create this mouthwatering Chicken Gravy Curry, you will need the following ingredients:

1/2 cup chopped Onions
500 grams skinless Chicken, cut into pieces
4 tsp Cooking oil
3 Green Chilies, slit lengthwise
2 tsp Ginger Garlic Paste
2 tsp Red Chilli Powder (adjust to your preferred spice level)
Salt to taste
Chicken Masala (store-bought or homemade)
1/4 tsp Turmeric Powder
Special Masala Preparation:
For the unique and thick consistency masala, you will need:

1 tsp White Rice
2 tsp Dhania (Coriander) Seeds
2 tsp Coconut Powder
4 Lavang (Cloves)
Preparation:

Begin by preparing the special masala: In a small pan, dry roast the white rice, dhania seeds, coconut powder, and lavang over low heat until they emit a delightful aroma. Allow the mixture to cool, and then grind it into a fine powder using a spice grinder or mortar and pestle.

Heat the cooking oil in a large, heavy-bottomed pan over medium heat. Add the chopped onions and sauté until they turn golden-brown and caramelized.

Add the ginger garlic paste to the pan and sauté for a minute until the raw aroma disappears.

Now, add the chicken pieces to the pan and sauté them until they are lightly browned on all sides.

Stir in the slit green chilies, red chili powder, turmeric powder, and salt to taste. Mix the spices well with the chicken, ensuring they coat the pieces evenly.

Reduce the heat to low, cover the pan with a lid, and allow the chicken to cook in its own juices for a few minutes.

Once the chicken is partially cooked, add the Chicken Masala and the special masala blend prepared earlier. Stir everything together until the masala blends harmoniously with the chicken.

Pour in enough water to achieve the desired gravy consistency. Cover the pan again and let the curry simmer over low heat until the chicken becomes tender and thoroughly cooked. Ensure the gravy thickens to perfection.

Serving Suggestion:
Serve the delightful Chicken Gravy Curry hot with steamed rice, naan, or roti for a wholesome and fulfilling meal. The combination of succulent chicken pieces, rich spices, and thick gravy will leave your taste buds thoroughly satisfied.

Conclusion:
Monsoon season calls for heartwarming dishes that fill your home with delightful aromas. This Chicken Gravy Curry, with its tender chicken and indulgent gravy, is the perfect companion for those cozy rainy days. So, enjoy the season to the fullest with this flavorful and comforting curry that will surely become a favorite in your household. Happy cooking and happy monsoons!
